A well established and reputable large 3* Hotel situated in PretoriaDuties will include:Planning and implementation of menus, training staff and ensuring standards are keptPlan staff rosters, manage staff discipline and motivation, execute staff evaluationsOversee the restaurant, room service, bar, lounge and banqueting food preparationsIssuing food supplies, monitoring usage and controlling wastageEnsure quality food preparation throughout the departmentMaintaining health and hygiene in the kitchen, monitoring food temperatures, supervising storage of foods, ensuring kitchen cleanliness and have a good work ethicAssistance with maintaining a profitable G.P. and low food costEnsuring clear communication between kitchen departments and sections regarding functions, requests and forecasted occupancyAssist with stocktakes, ensure optimum levels of kitchen operating equipment and the maintenance thereofAssisting and liaising the Food and Beverage Manager with duties and planningAttend financial and operational meetings and planning sessionsQualificationsYour Culinary diploma will prove a strong advantage.SkillsYour Minimum of 5 years’ experience in the culinary industry in a senior position will prove an advantage. Experienced with buffet preparations. Only South African residents with a green barcoded I.D. may apply. Able to work shifts. Your proven record of the number of staff managed in previous positions will stand you in good stead. Excellent communication skills are required.
