Our Client in Paarl is looking for a Chef de Parte on a Contract basis to start immediately until May 2015 (Contract to be revised).
Main Purpose is to produce food in keeping with the style of the restaurant standards in accordance with the menu’s that the head chef designs.
Experience Requirements:
Food preparation in an upmarket restaurant for a discerning clientele
Experience in product selection and evaluating quality in food ingredients
Experience in working in a kitchen brigade
Key Responsibilities:
1. Production of food in accordance with instructions and recipes
Correct colour of the food
Correct portion size
Required standards of presentation
Correct use of ingredients
Correct seasoning
Manage wastage
Excellent food preparation technique
Ensuring completions of assigned duties in an acceptable and professional manner
2. Stock Control
Ensure low food wastage to help maintain a 33% food cost
Implement the SOP’s that are in place to ensure a 33% food cost
Rotation of stock using the first in first out principle
3. Maintenance of equipment
Operate equipment according to manufacturer’s instructions
Reporting to the chef on duty when kitchen equipment have become inoperable for any reason.
Salary: R6 500.00
