Kendrick Recruitment is now seeking a strong Chef De Partie for a top lodge based in the world famous Kruger National Park. The Chef De Partie provides a service to the kitchen department and is fully responsible for the preparation of assigned menu items to set standards and carrying out assigned kitchen duties, within this role you will be reporting to the Head Chef. The main purpose of the Chef De Partie is to ensure that quality food is produced in a hygienic environment, in line with the required high standards that are expected. Portion control must be exercised according to the number of guests dining and stock rotation in terms of the mise-en-place used in preparation of dishes. Key points within this role are:Preparation of food in line with high standards expectedEnsuring that the cleanliness and hygiene of the kitchen is of the highest standardMaintaining fridges and stores to the highest hygiene and stock rotation standardsCommunication with kitchen and lodge front of house staff to ensure the smooth running of the departmentTraining and development in terms of kitchen skillsAchieving service excellence though teamwork To be considered you must have:A minimum of 2 years cooking experience in a CDP positionUnderstanding of kitchen procedure and timing requirements and the ability to plan accordinglyA passion for chefing and kitchen-related duties and be determined to grow in this areaGood communication skillsMatric qualificationUnderstanding of health and hygiene issuesKnowledge of safety procedures and the use of fire fighting equipmentFirst aid trainingThe ability to deal with constructive criticism Salary offered for this roleis between R7,000 – R9,500 this includes accommodation, meals, uniform and a contribution to medical aid and provident fund.
