We are currently looking for an CHEF DE PARTIE whom specializes in AUTHENTIC INDIAN CUISINE, to join this well-established fast growing company located just two-and-a-hours’ drive from Johannesburg in the malaria free Waterberg region in the Limpopo Province. The lodge provides a magical wildlife experience that clients will never forget.

Requirements

Excellent knowledge in Indian and Tandoori cuisine
Must have relevant 2 to 3 years’ experience within a 4(star) lodge environment
Must be prepared to work in a remote area, including the adaptability which is required in an environment such as a Private Game Lodge
Must have a stable work record with solid references,
Reliable, Ethical, Confidentiality driven, Motivated, Honest and Passionate
Must be able to communicate in Hindi, Gujarati and Marathi
Duties and Responsibilities:

To oversee the Indian cuisine and Tandoori Kitchen section
Preparing, cooking and presenting dishes within the section
Ensuring high standards of food hygiene and follow the rules of health and safety
Monitoring portion and waste control to maintain profit margins
Takes care of daily food preparation and duties assigned through the superiors to meet standard and the quality set by the Executive Chef
Ensure highest levels of guest satisfaction quality, operating and food costs on an on-going basis
Knowledge of all standard procedures and policies pertaining to food preparation, receiving, storage and sanitation
Full awareness of all menu items, recipes, methods of production and presentation standards
To act as Duty Manager as required when hosting Indian Guests, complete with being able to communicate with guest in Hindi, Gujarati and Marathi
Ability to produce own work in accordance with a deadline and to assist with encouraging others in achieving this aim
Consult daily with Head Chef and Executive Chef on daily requirements, functions and also about any last minute events.
Should be able to set example to others for personal hygiene and cleanliness on and off duty
Daily feedback collection and reporting of issues as they arise
Carry out any other duties as required by management
To liaise with Guest Indian Group Chefs onsite when required, ensuring all requirements are met and that guest Chefs adhere to hotel standards
To carry out on the job training
To attend meetings as required
Salary package and benefits

Salary R8 350.00
Provident Fund 13% of Basic,
Live in for single accommodation,
Meal provided whilst on shift
50% towards medical aid
