I am now in search for a Director of Food and Beverage, The successful candidate must be able to and is responsible for the overall effective food and beverage operations; selecting, educating and leading kitchen and dining room team; procuring supplies and equipment; execution and development of menu; budget preparation and operating within budgetary guidelines effectively.

Main Duties and Responsibilities

Lead and oversee the kitchen, restaurant and bar to the required standards, within budgetary limits and parameters of the law.
Ensure the prompt and efficient service of all meals, functions and beverages to the required
Maintain established dietary restrictions, standards and policies and assists or appoint a Dietitian in establishing and revising dietary policies and procedures.
Develop relationships with designated vendors, and responsible for purchasing maintaining par levels of food and supplies. Evaluate incoming food and supplies and directs storage location and procedures.
Record department costs, maintains inventory system, and regularly checks storage areas for stock level of staple items.
Direct duties of Executive Chef, the Kitchen team and Food and Beverage Manager as required.
Plan and assist in preparation of special occasions and banquets etc.
Ensure efficiency of food preparation and serving; compliance with local, provincial and national standards; sanitation, and hygiene and health standards of personnel.
Oversees the selection, education, product knowledge, standards and performance evaluation of the Kitchen, Service staff and Supplier Database.
Forecast, Evaluate, Compile and Present thorough conscious reports to immediate portfolio: Executive Chef, Cost Controller, F&B Manager and Restaurant Manager as well as Senior Department Cluster Heads: HR Manager, Hospitality Manager, Finance Manager, General Manager and Stakeholders at regular prescribed Intervals and Annual General Meetings.

Operational Proficiencies

Development, implementation and maintenance of written food and beverage service objectives and standards of practice with procedures for implementation.
Assures education is provided to food and beverage personnel in accordance with the staff education plan, plus provides on the job training for dining room personnel.
Ensures that kitchen and dining room service is in compliance with all Food, Health & Safety regulations of the country in relation to service, sanitation and personnel.
Participates in Executive Cost Control and Budgetary Measures.
Inspects equipment to determine repair or maintenance needs and cleanliness.
Implements regular and Attends in-service training and education sessions, as assigned.
Performs specific work duties and responsibilities as assigned by executive order and superiors.
Maintain quality assurance and revision of all SLA's with external suppliers.

Minimum Requirements

Bachelor's Degree/ Similar in Hospitality Field.
Minimum of four to five years of experience in a director level position with experience in overseeing front and back of house operations.
Combination of 5 Star Hotel and Lodge Experience preferable
Drivers License & Own Vehicle
Extensive knowledge in various Operating and POS Systems preferable
Auxiliary accreditations and accolades accumulated in line with career development welcomed for advantageous consideration.

Salary

R30k-R35k (negotiable)
