Our Client is looking for a talented individual with a high level of integrity, an effective leader and

communicator at all levels with strong man-management skills.

An outgoing personality with excellent guest contact skills.

Have outstanding product knowledge in food.

Thorough knowledge of current leading culinary trends in food and beverage.

To create, design and implement menus throughout the different lodges that meet the demands and exceed the expectations of our guests as agreed with Senior Management.

The candidate has to have a thorough understanding of styles and different types of dietary requirements.

To take complete responsibility for the procurement of all goods – food related and materials necessary for the food production, on a daily basis for the three lodges, pastry kitchen and staff canteens.

To take complete responsibility for the hygiene, cleanliness and maintenance of the three kitchens including fridges, freezers, store rooms, crockery, kitchen and boma equipment.

Good IT and computer knowledge, recipe development and cost control.

To be able to work under pressure and to be flexible at all times, considering the location and environment he/she is working in.

Creation of new dishes to replace menu dish when required.

To ensure effective service and butler management systems for kitchen and service teams.

To implement effective Green Waste Management Systems for the kitchen with a focus on minimising plastic usage.

Cycle of 42 days on and 14 days off, however this should be flexible due to lodge requirements. This cycle excludes annual leave of 21 days.

Team work is of the utmost importance and you must assist your team members when required.

Due to the nature of the lodge environment, you may be required to be available for situations that arise that need a senior manager’s attention.

Salary R23000.00 including single accommodation with company benefits.
