THE BOARDROOM-REFRESHING RECRUITMENT seeks a highly skilled & experienced EXECUTIVE CHEF for our client, a 5* luxury hotel.To ensure the smooth functioning of the entire Kitchen Operation, within budget, to the total satisfaction of the guest. To raise and maintain the standards of food preparation and presentation beyond 5 star levels.If you meet the criteria below, then I would like to hear from you! Responsibilities:• ensuring excellent food at all times in every facet of the hotel where food is served• ongoing training of service providers to continuously maintain and improve standards• roster in order to maximize staff productivity and operational efficiency• Ensuring that all events are adequately staffed to guarantee excellent service. Complete planning, organizing, controlling of the food preparation and presentation after close liaison with the Conference Coordinator or Function Organiser as applicable.• ensuring that kitchen attendants and chefs are totally familiar with their job descriptions and that such job descriptions are carried out to the best of everyone’s ability.• Ensure that any disciplinary issues are correctly dealt with quickly, efficiently and in terms of the law.• Be actively involved in function meetings to ensure that instructions are effectively executed on the day, to the letter of the guest’s wishes• Responsible for maintaining acceptable food costings• Ensure that the month end figures and statistics are completed by the 3rd of every month.• Responsible for maintaining optimum stock levels of all food supplies to avoid either wastage or shortages.• Ensuring that all items on the various menus are available at all times• Ensuring that correct mis-en-place is executed on a daily basis• Responsible for placing food orders with preferred suppliers, and following correct documentation procedures• Responsible for any stock or equipment shortages, which is reported to the GM and Directors• Responsible for ensuring all equipment is maintained to satisfactory standards• Responsible for weekly stock reports to the GM, and ultimately to the Directors• Ensuring that creative, tasty conference eats are organized daily, avoiding any repetition to delegates (Full spec available upon request) Applications should include your updated C.V in word formatCopies of relevant qualifications6 images displaying your food presentation skills, fine dining styleYour profile photo in professional chef attire (shoulders and up)Written & contactable referencesPlease note that due to high application volumes, we regret that only shortlisted applicants will be contacted.
