Experience in both fine dining and ala carte is needed. RequirementsA minimum of 3 year’s work experience in a 4 or 5* environment as Executive Sous Chef or Head ChefComputer Literate – Windows & Fidelio knowledge essentialExcellent Guest Relations & motivational skillsExcellent planning skillsStrong Leadership skills and able to lead a dedicated team efficientlyExcellent menu planning abilityCreative with menus, presentation and garnish skillsStrong day to day organizational skillsAble to maintain five star standardsExcellent Communication Skills – Fluent in EnglishAble to work shifts or work additional shifts and hours at short noticeWork well under pressureSelf-motivated, self-starterSound knowledge of Industrial Relations proceduresQualifications
Minimum Grade 12 at a recognized institutionChefs Qualification or Diploma
Key Areas of ResponsibilityDaily running of a 5* kitchen in its entirety on a day to day & monthly basisPlacing & Receiving orders staying in line with budgeted figuresRegular stock takes, checks on wastage in order to manage food cost.Maintaining guest satisfaction of all food itemsHands on Planning and Organization of all Kitchen M.E.P.Assisting with implementing of all new menus & costing thereof.Assist where needed and cross training within the kitchen
To assist planning and implementation of all menusBe familiar with Health and Safety proceduresEnsure that all operating equipment is properly utilized by correct handling, storage and regular stock counts, in order to minimize losses.
