Kendrick Recruitment are now looking for an experienced Food & Beverage Cost Controller for a 5* Hotel based on the Waterfront in Cape Town. Minimum Requirements:?Matric?2 - 3 years’ experience in a similar role in hospitality?H ospitality diploma and advantage Core Competencies?A bility to work in a pressurized environment?Willingness to work shifts?Excellent organizational & planning skills?Excellent communication and interpersonal skills?Compute r literacy?Presentable, well-spoken individual?Financial a nd administrative skills?Excellent negotiation skills and the ability to make decisions?Full understanding of Micros front and back end, as well as Micros My Inventory. Res ponsibilities Control of Micros front and back end To ensure a continuous audit and accumulation of data fo r the production of daily reports. To ensure that official orders have been issued for all purchases and goods receiv ed. To ensure that stock records systems are accurate and up -to-date. To audit requisitions and issues of all outlets and highlight any inaccuracies. To ensure that all receivable costs for both kitchen and bar are processed speedil y and held ready. To ensure that all computer input is eff ected daily. To ensure regular stocktakes are carried out. To assist with the checking of overhead costs to ensure that all departments are aware of costs, particularly when t here have been deviations from the acceptable norm. To pro vide closing stock figures and physically assist with sto cktaking at stipulated intervals. To submit reports and iden tify possible reasons when results differ from anticipated t argets. To compile revenue reports showing when co ntrols are effective or highlighting discrepancies and recommend ap propriate corrective action. To compile control reports fo r bars and kitchens showing percentage profits. T o compile stock check reports, with a breakdown of items che cked and give comments where variances occur. To ensure that all information is passed to Heads of Department so they can tak e appropriate action in the event of adverse results. To e nsure a smooth working relationship with other departments. To ensure that the prices entered in programmed or computerised software are correct and updated when necessary. To ensure that menus are costed regularly. To en sure goods receiving procedures are strictly adhered to. T o prepare feasibility studies as required. To carry out re gular training/coaching sessions to ensure that staff are performing their duties correctly.
