Food & Bev Operations Manager

Educational Requirements:
Matric
Relevant qualification in Food & Beverage Management

Experience Requirements:
5 Years’ + Experience in Food and Beverage
5 Years’ + Experience in Gaming / Gambling is preferred & advantageous
Computer literate
Strong financial acumen, budget planning and analysing experience
Knowledge of Pilot; Costing’s, Pricing, Menu Design and Implementation
Knowledge of Payroll administration and all related functions including In-Time
Knowledge of Food Hygiene and various Food Preparation Methods
Technical Knowledge of Operating Equipment and Staff Training in all aspects of Gaming and Catering
Problem Solving Skills
Understanding of HR Principles and policies
Able to Travel
Own transport essential & valid license

Responsibilities:
Ensuring the smooth running of the gaming and food and beverage departments
Controlling Food and Beverage cost percentages
Creating of rosters in line with business needs
Sourcing & negotiating with suppliers in line with company standards
Ensuring staff are trained to perform their duties as stated in their Job descriptions in both front and back of house areas
Ensuring compliance as regards all Gaming Operations of various sites
Managing the Pilot system
Creating menus to suit specified concepts and to achieve certain targets as laid out by Top Management.
Ensuring staff are adhering to Health and Safety procedures
Ensuring adherence to various Health and Safety and Gaming controls and procedures
Staff management
Site / branch management
Control of cash daily
Banqueting Management, control
Analyze and interpret daily turnover and food cost results
Determine and implement corrective / proactive action
Providing marketing initiatives and implementation of marketing programs
Ensuring profitability of sites
General Admin

Additional information:
Salary is discussed on current earnings
Must be willing to travel regularly to all branches across South Africa if needed but especially between branches in Limpopo
Must be willing to work shifts, weekends and public holidays
