VACANT POSITION – Food & Beverage Manager Protea Hotel The Richards requires the position of Food & Beverage Manager to be filled. A minimum of Grade 12 is required. The successful applicant will have at least 5 years of broad-based hospitality industry experience of which at least 3 years have been spent in F&B Management. DUTIES, RESPONSIBILITIES AND PERFORMANCE STANDARDS Required to have great attention to detail and ability to lead a large team.Excellent knowledge of Opera with specific reference to Sales & Catering module.Must be very well organized and able to work accurately under pressure.Able to produce and drive an annual business plan for the F&B department incorporating a yearly marketing plan and an associated budget.Required to compile an annual financial budget for the F&B department with the input of the General Manager.Is fully familiarized with all hotel and company policies, as well as hotel programmes offered such as Loyalty programmes, audit and service measurement programmes and merit awards.Revenue Control- Fully responsible for the F&B department’s financial performance and long term sustainability.Must adhere to all laws, regulations, licenses and EXTRABOLD policies pertaining to the operation of the F&B function.Ensuring that standards are maintained in F&B outlets at all times in relation to service delivery and hygiene requirements.Proactively communicating market trends and possible changes in guest preferences and expectations on F&B offering to the General Manager at mandated meetings.Adhering to the standardized portions used and is responsible for the controlling of food, beverage and labour costs within set norms within the department.
