Large food group are looking for a Head Chef / Kitchen Manager to run their busy kitchen at one of their restaurants in Durban.

DUTIES:

1. Purchasing, preparation and maintenance of quality standards; sanitation and cleanliness;

2. Training of employees in methods of cooking, preparation, plate presentation, portion and cost control; health and safety; and sanitation and cleanliness.

3. Ensure that the quality, quantity and presentation of all food that leaves the kitchen meets or exceeds the standards and expectations of the F&B Manager and clients and is served timeously.

4. Control inventory through regular stock takes.

5. Maintain par stocks of ingredients for all menu items or order or requisition food or other supplies as required to ensure an efficient operation.

6. Ensure stocks are stored in their designated areas and rotated in the proper manner.

7. Ensure that high standards of sanitation, cleanliness and safety are maintained throughout all kitchen areas at all times, adhering to food and occupational health and safety standards.

8. Evaluate and implement the necessary procedures and controls to minimize waste, theft and control of left over food distribution.

9. Ensure the entire kitchen staff follow all established procedures and policies.

10. Prioritize and delegate tasks in kitchen layout and prep techniques to insure speed and quality of service.

11. In conjunction with the F&B Manager, plan or participate in planning menus, preparing and apportioning foods, and utilizing food surpluses and leftovers.


REQUIREMENTS:

a). 5 years + experience managing a busy kitchen
b). Chef diploma / National Diploma in food and beverage management
