RedCat Recruitment is urgently seeking a suitably qualified and experienced HEAD CHEF (LIVE-IN) for a large well-established private game lodge in the Limpopo Province.

REQUIREMENTS
Grade 12.
3 - 5 years’ experience within a 4* lodge environment.
Must have the required culinary qualification.
Good computer skills (MS Office, Email / Internet).
Valid driver’s licence, own reliable vehicle.
Person must be prepared to work in a remote area, including the adaptability which is required in an environment such as a Private Game Lodge requires,
Basic financial understanding,
Ability to manage a kitchen as a business unit.
Responsible for the preparation, cooking and presentation of all food items in accordance with the laid down minimum standard as required by the company in line with a 4* Lodge.
Ensure the quality and efficiency of the food and service to the customers is at the highest level always.
Reduce food wastage.
Serve at the hot buffet as and when required.
Labour management.
Stock control, budgeting, procurement.
Ensure on time deliveries from suppliers.
Ensure the company standard is upheld by all kitchen staff.
Liaise with the Executive Chef on all functions well in advance of the function to ensure staffing is correct.
Ensure all food service areas are maintained.
Food management – FIFO.
Reporting of breakages.
Training of staff to required level of efficiency.
Promote inter-departmental co-operation to uplift the standard of the lodge.
Management reporting.
Manage customer complaints.
THIS WOULD ONLY SUIT A SINGLE PERSON WITH NO DEPENDENTS.

Salary package offered: - Monthly salary (includes provident fund) + accommodation (for a single person) + meals whilst on duty.
