What are the key responsibilities of the position? - Full kitchen administration and management - Ordering - Preparation of food in line with high standards of excellence - Ensuring that the cleanliness and hygiene of the kitchen is of the highest standard - Correct use and maintenance of kitchen equipment - Maintaining fridges and stores to the highest hygiene and stock rotation standards - Management of dustbins and recycling - Communication with kitchen and lodge front of house staff to ensure the smooth running of the department - Portion control What type of experience do we require? - A minimum of 3 years cooking experience as a Sous Chef or Head Chef - Experience in fine dining and a la carte service - Fully computer literate - Understanding of kitchen procedure and timing requirements and the ability to plan accordingly - Understanding of health and hygiene issues, safety procedures and the use of fire fighting equipment and first aid training Which qualifications will secure this position? - Recognised Professional Cookery Qualification - Vehicle and License - Matric What skills / behaviours are required? - Team player - A passion for cheffing and kitchen-related duties and being determined to grow in this area - Good communication skills - Able to work under pressure Position Reports to: General Manager Please ensure that you provide the following information with your application: - Photograph – Head and shoulders picture, in low resolution format for our database - Start and End dates for all previous employment - Written references that you have available - Current contact telephone numbers and email addresses for all previous employers, for referencing purposes.
