Staff Connection is currently seeking a Head Chef a a stunning property situated in Mpumalanga.Purpose: The main purpose of the Head Chef is to manage the kitchens and quality of food at the various kitchens, in line with the service vision and creative concepts of the Lodge and the Head Chef is responsible to the General Manager for this.It is the responsibility of the Head Chef to monitor standards within the department. The role is additionally strategic in nature, and the Head Chef must drive the appropriate food directive for the lodges, and move the department towards achieving broader goals.In this capacity, guest expectations regarding the standard of food should be exceeded. In addition, the kitchens need to be monitored so that they run in a cost effective manner, within the agreed budget; in a manner which is conducive to positive inter-personal relationships between staff; and at a superior level of efficiency.The Head Chef is also responsible for ensuring that all staff are provided with meals that are sufficient in quantity and nutrition, within the allocated budget.The hygiene and safety of the kitchen is to be maintained at the highest level. All kitchen equipment must be cared for, with breakages kept to an absolute minimum.The Head Chef must continually grow the kitchen staff and him/herself in terms of kitchen knowledge and skills and discuss any training requirements with the HR Manger or General Manager.Finally, the Head Chef must hand over responsibilities to the Sous Chef in his/her absence and ensure that a full handover is received on his/her return.Scope of work:In broad terms the head chef oversees the following key performance areas:Drive the broader goals of the company, in terms of the kitchens, by planning and implementing Strategic Management Plans.Supervision and training of the kitchen staff in line with the company StandardSupervision of food preparation, in line with company Standards of ExcellenceEffective guest interaction to enhance guest satisfactionEffective management of the company School of Cooking and staff canteens through the Chefs School DeveloperAdministration of orders to minimize shortages and wastage and effective stock controlEnsuring that the cleanliness and hygiene of the kitchen is of the highest standardCorrect use and maintenance of kitchen equipmentCommunication with kitchen and lodge front of house staff to ensure the smooth running of the departmentTo identify and eliminate potential risks in the work place to ensure minimal liability to Singita. As such the person filling this position needs to have:Have experience in running multiple small to medium sized kitchens and a three years chef’s qualification, or a minimum of 8 years experience with at least two of these at a similar level of responsibilityBe able to calculate food costs and understand kitchen financesGood computer literacyA clear understanding of basic labour law and disciplinary proceduresAssertiveness, patience and good organizational skillsUnderstanding of kitchen procedure and timing requirements and be able to plan accordinglyGood communication skillsThe ability to implement and maintain health and hygiene proceduresKnowledge of safety procedures and the use of fire fighting equipmentFirst-Aid trainingA passion for cooking and an awareness of contemporary and innovative developments within the food and lodge industries as well as international trendsThe ability to deal with constructive criticism Should you not recieve a response within 2 weeks, please assume your application unsuccessful.
