Our wonderful client, a well known restaurant in the Tembisa.Duties for this position includes:Overall responsibility for daily operations in the kitchenLiaising with purchasing companies for food ordersMaintaining or raising the profit margins on foodProducing menus and new dishesApproving all prepared food items that leave the kitchenStock ordering according to projected trade levelsControl wastage and record/reports all wastageImplement and ensure the company Health & Safety Policy is met at allAbility to manage staff in a big kitchen essentialConduct daily, weekly and monthly stock takesEnsure all equipment is well maintained and in correct working orderHygiene and control of all store rooms, fridges and freezersCompiling staff rosters. Related kitchen administrationOptimising profitCarry out instructions given by the management team SkillsAbility to manage a large staff competent in a big kitchen essentialAble to work very easily under time pressureMust have strong knowledge of food and of kitchen management procedures.Competent understanding of gross profit and cost of salesExperience with menu costing and compilation skills.Strong stock control skills.Excellent creative ability.Excellent display of culinary flair.Excellent cooking skillsStrong leadership skillsPro-active in problem solvingExcellent communication skills and well presented at all times.
