Description of Business:

This amazing holiday destination is seeking an experienced F & B Manager for their a 5 star resort.  Good experience and knowledge is a major requirement.

REQUIREMENTS:       

Hotel School Diploma (minimum 3 years)

Sound experience in all F&B areas obtained in a 4/5 star unit

Knowledge of Opera and Micros

Currently in an Assistant F&B Manager Position

SCOPE AND PURPOSE OF JOB:

To effectively manage and control the administration, costs, operations and human resources of the Food and Beverage outlets.

Maintain operating standards as laid down by the company.

SPECIFIC DUTIES:

To ensure that the Department is economically manned at all times to meet the needs of the business.

To manage and control all outlets within F&B in order to achieve or exceed budget profitability, by maintaining a high standard of service, presentation and efficiency

Controls operating equipment through correct handling, storage and regular stock counts, in order to minimize loss through waste, theft and breakage’s

Ensure daily monitoring of Temporary Personnel, based on the following:

Induction

Punctuality

Service / product knowledge

Dress code

Company procedure and policy – all are adhered to

Productivity

To monitor, appraise and communicate with subordinate personnel, discuss with the F&B Manager potential movement to, within and from the department

Ensure that service as per LHW standard are maintained and followed through at all times. Ongoing, daily / weekly training

Ensure follow up and deadlines are met at all times

Ensure briefing and debriefing is done on a daily basis

Ensure that all furnishings and fittings are kept clean and in good state of repair

Maintain a high standard of customer relations and personal contact with guests and ensure that guests complaints are dealt with immediately and effectively

Responsible for the implementation and maintenance as directed by the F&BManager

Ensure that the appearance of all personnel is of the highest order

Maintain and improve the high standard of hygiene, cleanliness and presentation of kitchen and F&B storage areas

To help and implement all new food and beverage concepts

Ongoing  promotions in all F&B outlets

To assist the F&B Manager in the development and introduction of all agreed systems, the objectives of which are to improve the efficiency and profitability of the department

May be called upon to perform other duties not mentioned above, as requested by Head Chef and the General Manager
