AA21207 - An upmarket Game Lodge situated close to Hoedspruit in Mpumalanga seeks a Restaurant Manager with the following qualifications: Grade 12. Relevant Hospitality Training a strong advantage.Duties will include the following: Review Waiter roster as per Occupancy levels & activities. Staff uniform inspection & update register. Assign waiter duties. Table allocation as per In-house guests & arrivals. Manage service period set-ups & ensure all tables are set as per the company standard. Ensure all Restaurant OE par levels are maintained and controlled. Assign & log waiters to guests. Server feedback record – Compile feedback % rating as per waiter and submit to F&B Manager. Ensure the S.T.A.R.S. Service Philosophy and Core values are known and practiced by all Restaurant Staff. Achievement of F&B Service feedback target. Ensure Buffet is set-up and to company standard. Operational management of restaurant during service periods. Maintaining of cleanliness standard in all restaurants, stores & back of house areas. Ensure proper garbage separation & re-cycling practices are carried out in all Restaurants. Ensure Hygiene standards are adhered to by all waiters. Reporting of all maintenance issues in restaurants to Housekeeping & F&B Manager. Lobster Ink Training – all waiters & career path staff to actively participate on Lobster Ink! Monthly stock count of assigned OE. Compilation & submission of OE orders to F&B Manager. Set-up & breakdown of Bush events & activities. Staff Discipline & Adherence to company SOP’s. Submission of Waiter Annual leave schedule to F&B Manager. Printing & Laminating of all Buffet Labels. Evening Hosting shifts as required. The candidate must have the following skills: Able to Work shifts. Driver’s license. Energetic with a positive attitude. Good written & communication skills. Computer literate – Ms Word, Ms Excel, Hospitality system, POS system. 2yrs Experience in a similar position – Lodge / Hotel. Strong leadership & organizational skills. Extensive wine & beverage knowledge. Solid food knowledge. Barista training an advantage. Hotel school graduate an advantage.
