My client, a five star Hotel and Restaurant based in Franschhoek, is seeking to employ a Senior Sous Chef.

Requirements:

  • Previous experience in  5 star establishments 
  • Experience of menu planning/design
  • Experience of menu costing and delivering food GP’s as agreed
  • Excellent knowledge of food safety, storage, health standards
  • Versatile in providing different styles of cuisine
  • Good understanding of nutrition, food allergies restrictions and choices

Responsibilities:

  • Assisting with the management of both kitchen teams to maintain an exemplary level of food standards reflecting the needs and requirements of our guests and team member
  • Maintaining food costs within budget
  • Menu planning, stock control and ordering also liaising with guests
  • Balancing staff menus with budget and staff contentment levels
  • Commitment to training the team and developing those with potential with a view to internal promotion
  • Working closely with the kitchen and restaurant teams, management and other departments to ensure a harmonious working atmosphere
  • Maintaining the highest level of hygiene as per the standards
  • A high level of guest contact and liaison to deal with special requests; private dinners; special events and exclusive use bookings
