DFH21228 - A 5* Big 5 Game Lodge is looking for a strong SNR Chef de Partie to assist over the busy season. Qualifications: National Diploma in Professional Cookery with 2 years experience in a SNR chef de partie position. Must have 5* fine dining experience. First Aid Training.Duties will include: The main purpose of the Chef de Partie is to ensure that quality food is produced in a hygienic environment, in line with the required standards. Portion control must be exercised according to the number of guests dining and stock rotation in terms of the mise-en-place used in preparation of dishes.The candidate must have the following skills: Understanding of Kitchen procedure and timing requirements and be able to plan accordingly. Passion for cooking and must have great plating skills. Good written and verbal communications skills. Maintain health and hygiene procedures. Knowledge of safety procedures and the use of fire fighting equipment. Must be able to deal with constructive criticism and present healthy, innovative and modern dishes.
