Kendrick Recruitment is now looking for a Chef Tournant/Personal Chef/Sous Chef for one of the most exclusive 5* Hotels based just 10 minutes down the coast from the bustling heart of Cape Town.The Chef Tournant will be responsible for managing the kitchen in the private villas (part of the hotel) and then acting as Sous Chef in the main kitchen when the villas are not occupied.The candidate will be fully responsible for checking the arrival and departures of the guests into the villas and ensuring that the kitchen is fully stocked, menus are finalised, dietary requirements are sustained and all the prep work is done for the duration of the guests stay. The chef will be required to meet and greet the guests on arrival and will be the eyes and ears of the guests requirements ensuring that a 5* standard is given at all times. The highest quality of food and service will be required and it is the chefs responsibility to oversee this and liaise with all staff members. The menus are to be innovative and modern and formally typed up and presented to the guests. The chef is required to be at the service of the guests at all times without being intrusive. Control over stock, wastage, waste disposal and breakages are all considered a large part of the role. Ideally this position needs a sophisticated and mature experienced chef that is well travelled and flexible in their work pattern. As this position also requires guests hosting etc then they will require someone that is neat, presentable and has a professional manner. The successful candidate will need to boast the following qualifications and skills:A recognised formal culinary qualificationAt least 4-5 years chefing experience in a 5* environmentAt least 2 years as a 5* Senior Chef de Partie or Sous Chef A passion for cooking first and ambition to improve skillsBasic knowledge of HACCP and HygieneExcellent communication skills and the ability to communicate fully in English (written and spoken)Computer literate, including POS, OPERA, Word, ExcelExcellent interpersonal skillsOrganisational skills - Ability to plan, coordinate, execute and follow upAbility to multitaskExcellent time management skillsKeen attention to detail· Hands on attitude and will lead by example· Extensive kitchen knowledge able to do Cold Kitchen, Pastry, Meat ,Fish and Sauces· Knife skills· Good wine knowledge, able to understand food & wine pairingThis position is available immediatelyThe salary is highly competitive to the right candidate, 30 days annual leave and 8 days off per month, Live-outIf you feel that this is the position for you please apply today!!
