Description: The Sous Chef role, together with the Chef Tournant, requires a unique team to ensure the success of the culinary operation and provide the guests with that special and memorable dining experience to remain with them long after they have left the reserve. This Private Game Reserve is located in the finest territory of a world famous game reserve in Mpumalanga, South Africa and forms part of the greater Kruger National Park. What are the key responsibilities of the position? To design and implement menus for the lodges that meet the demands and exceed the expectations of our guests as agreed with Senior Management. Provide effective leadership through professional management and encouragement of all subordinates. Build, train and maintain strong, content, challenged and consistent kitchen brigades. Implement effective operational standards for the lodge kitchens Implement and maintain efficient financial budgetary controls and procurement controls. What type of experience do we require? - Minimum of 3 years similar experience in a 5 star environment Which qualifications will secure this position? - Professional Culinary qualification from a recognized establishment - Driver s License beneficial What skills / behaviours are required? Motivated, enthusiastic, energetic, creative and passionate. An outgoing personality with excellent guest contact skills A talented individual with a high level of integrity, an effective leader and communicator at all levels with strong man-management skills. IT and computer knowledge Recipe development and cost control knowledge. Knowledge of current leading culinary trends in food and beverage. The ability to work under pressure and to be flexible at all times, considering the location and environment he/she is working in.
