A minimum of 3 years management experience in a medium sized kitchen
International experience in a similar 5 star establishment
Experience in fine dining and a la carte service
Ability to produce innovative and modern dishes to the highest of standards
To provide a support to the executive chef.
To assume full management responsibilities for the kitchen during executive chef’s absence.
To be compliant, uphold & provide input to food quality & standards.
To be compliant, uphold & source best possible produce from approved suppliers.
To be conversant, compliant & knowledgeable of all dietary requirements.
To be compliant, conversant & uphold kitchen stock holding & produce control procedures.
To be conversant, uphold & compliant of department & Company health & safety practices.
To be conversant & compliant with Company HR & industrial relations responsibilities.
Excellent planning and organisational skills
Good interpersonal and communication skills (verbal and written)
Working knowledge of Health, Safety and hygiene practices
A natural relationship builder
A mature approach to life in general

Highly self-motivated and self-directed
Comfortable assuming ownership for their role in the business
