Our client is looking for a Fruit Processing Controller / Developer who will be responsible to review and set up raw material specifications to farmers for all fruits that will be processed at the processing plant.

Responsibilities
- Identify suitable fruit varieties for industrial processing
- Formulate raw material specification for farmers/growers; Include brix levels, color, variety, defects, Ripeness, etc.
- Develop and document effective processes flows for processing storage and handling products
- Understand fruit characteristics to maximize output and quality of final product
- Identify and establish critical quality controls checks in production processes
- Reduce wastage in the production process by ensuring that the correct raw product is used and the process is designed to optimize the
characteristics of the raw product
- Set up final product specification and Introduce optimal processing conditions ex temperature control, cleaning, cutting, rinsing etc. to ensure final
product meets approved specification with proven parameters; shelf-life testing, acidity etc.

Requirements
• Degree in Food Technology specializing in Food processing,
• In-depth knowledge of various fruit and its specific characteristics
• At least 4 years of experience in a fruit or vegetable processing environment
• Sound knowledge of ISO22000 system
• Experience in working with ERP systems like Sage, SAP, Pastel evolution.
• Have access to a network and specialists as resources in the field would be a distinct advantage
• Fluent in English is required, and a second South African language is seen as an advantage
