Here’s what you need to have
Qualifications / Experience
• Experience in the 5* hospitality field
• Chef School (or similar qualifications)
• Qualification or experience in training
• Basic Computer skills
• Experienced in kitchen service and staff management
• English speaking
• Driver’s License essential
Behaviours / Skills
• Passion for food and cooking
• An eye for detail and presentation
• An understanding of 5 Star cuisine
• Computer literate
• Great planning and organizational skills
• Experience of stock control and food portioning
• Understanding of cost controls and budget lines
• Hands on approach
• Sensitive to cultural issues/ patient with team members
• Ability to provide strong and supportive leadership to kitchen & scullery team
• Excellent social and interpersonal skills
• Ensure effective menu planning
• Confidence in explaining dinner menu in front of guests
• Sense of ownership and pride for the guest experience
• Good eye for detail
• Flexible attitude and willing to take on tasks as necessary
• Able to interact with guests and behave appropriately
• Ability to plan and organize
• Realistic expectations of bush life
• Well groomed and clean shaven (if male)
Here’s what you’d do
• Management of the kitchen and scullery departments
• Maintain a distinctive, high quality Pan-African style of cuisine with seasonal, local ingredients
• Monitor standards and carry out training as required
• Financial, statistical and monthly reporting
• Monitor staff overtime and casual costs
• Work with the team and coach, train and support performance
• Maintain a high level of hygiene in line with statutory requirements

• Market related basic monthly salary
• Live-In basic furnished accommodation (possible sharing)
• Meal allowance over and above salary as well as meals whilst on duty
