Looking for a Senior Sous Chef for a Private Game Reserve
Skills required:
At least 5 years’ experience working in a big kitchen with a big team
Have a good verbal understanding and a written knowledge of English
Understanding of level 1 health and hygiene for food handlers
Good knowledge of food preparation, knife skills and food service
Pastry knowledge is essential
Passion for kitchen management – including all kitchen administration, general hygiene and people management
Computer literate

Good all-rounder who can fit into any department in the kitchen
Runs kitchen in the absence of head chef and also be able to work as a team with the head chef
Ensure the highest health and hygiene standards are maintained within the kitchen and dining areas
Have full knowledge of cleaning products and use
An understanding of working remotely and be flexible with lack of ingredients
Up to date with new dietaries and guest preferences
Control waste management and strive to waste as little as possible as this is the core of our values
Recycling - good recycling practices as well as assist new staff members to recycle waste and litter. Minimize waste
Keep a rotation of goods going to avoid losing stock by expiry and inform the head chef
