Senior Sous Chef | Kruger Park Area | Luxury Lodge Group

The SENIOR SOUS CHEF is responsible for planning and directing food preparation in the kitchen. This will involve a large degree of employee management. You will be required to act in the head chef's absence and to ensure that the kitchen runs in the same professional manner when the head chef is not on duty.

Key Focus Areas for Senior Sous Chef

Managing, leading, and training of the kitchen staff in line with property food directive, ensuring food preparation to the highest standard
Effective Kitchen Administration to minimize shortages and wastage and effective stock control, assuming full responsibility of any shortages, wastage, and variances
Meet mandate cost through creativity and robust stock and accounting systems
Perform effective asset management to ensure that all company assets are maintained in the best possible condition
Ensure that portion size and plating of food are controlled to avoid wastage and maintain a high standard of food
Collect guest information while speaking to guests; inform the Management to record and act on guest preferences
Maintain discipline in the department according to company standards and resport deviations to your head of Department/Management

Requirements, Qualifications and Skills

Grade 12 / NQF Level 4 (essential)
formal qualification from a reputable culinary institution
excellent grasp of the English language and communication skills - essential
5 years of hospitality experience and 2 years of senior chef or senior sous chef experience
A quick innovative thinker with great people skills, diplomacy and able to remain focused but professional
Start date: October 2021
