JOB DESCRIPTION
Research and Development
• Development of Specialized Hard boiled candies and Lollipops in forming lines as well as in depositing equipment
• Development of Éclairs Butter Toffees for cut and wrap as well as deposited
• Development of Chocolate base and Centre filling recipe’s for moulded chocolate,
• Development of Nougat and caramels for enrobing lines.
• Development of flat and roll wafers and layering center cream.
• Development of Pectin based Deposited Jelly’s, and Cup Jellies.
Technical
• Designing of packing materials, cylinders for printing, and packing material structures.
• Following the guidelines of FSSAI, ISO 22000 & HACCP. Ensure HACCP & ISO 22000 Food safety management system is in place and have been monitored regularly and revived.
• Resourceful in reviewing the Technical Specifications / Batch Manufacturing Records / Validation Protocols, Validation Reports, ISO Documentation, and other quality documents in adherence to various standards like ISO & FSSAI & Codex.
• Thorough Machinery understanding of Confectionery, Chocolate and wafers (HAAS, HEBENSTREIT, CORAL, JUPITER)
• Handling Of confectionery machineries, continuous cookers, Batch Cookers, High speed emulsion mixers, Batch formers, strada lines such as Bosh, Klockner Hansel Latini etc.
• Handling Of Confectionery Packing machines ( Pillow pack, Cut & wrap, Double twist, Bunch Wrap lollipop ( Carugil & European)
• Core Expertise in Project work ( Installation of Boiler, Conches, Moulding lines, Packing machines, Depositing lines Candy and toffee , Forming Lines ,Liquid filling Jelly, Compressors and softer water plants etc.
• Installation of Boiler, Cooling Towers, Compressors, Diesel generators, transformer, Water softener
• Designing proper layout of the factory in terms of waste water treatment, drainage of rain water.

Food Safety and Quality Control and Assurance
• Implementation of Food Safety and Quality Management System across the organization.
• Implementation of Good Manufacturing Practice and Good House Keeping.
• Supporting in improving quality of the product, Raw material and Packaging material by exploring opportunities in production processes.
• Ensure quality norms are been followed and work is been carried out as per given work guidelines Standard Operating Procedures
• Extended the Chemical laboratory and built up a new Microbiology Laboratory and Chocolate Laboratory

• Extensive experience in Quality Management including setting up of Chemical and Microbiology Laboratory, process improvements, product improvements, Quality and Food Safety Management, Product Development, vendor quality certification
• Devising and implementing process & quality plan & undertaking basic SPC study for critical parameters.

Standards and Process Control
• Ensure process parameters. ( Ph, Brix, Temperature, Drop weight, Cream % Colour, flavour, taste Acidity and TRS)
• Ensure packed products are within standard norms (Number of Counts, wrapping quality, batch code prods. Expiry date, capping and labelling).
• Develop standards for all Raw Materials, Packing Materials and Finished goods within the organisation & maintain minimum stock Levels.
• Installation of Process related machineries based on the layout of the factory.
• Calculating Variances and estimated yields on monthly basis.
• Deriving costing of different products and feasibility for improvement in terms of cost and quality & realizations.
• Machine maintenance Planning and scheduling.
• Optimize capacity utilisation and ensure maximum efficiency is achieved in all the manufacturing and packaging machines.
• Ensure preventative and periodic maintenance schedules are planned and implemented in all the manufacturing, packaging and utility machines.
