ProStaffSelect is recruiting for a SUSHI Chef de Partie for this 5-star luxury hotel in the heart of the V&A Waterfront to assist with daily Sushi production. The award winning fine dining restaurant at the hotel boasts a highly skilled and professional team of chefs.

Minimum Requirements:
At least 5 - 6 years previous experience in an Authentic Japanese Restaurant or 5-star hotel environment.
Candidates must be SA Citizens or foreign chefs in possession of a valid SA Work Permit.
Excellent communication skills in ENGLISH.
Well presented and exceptional personal hygiene.
At least 2 written work related references (not older than 3 years)

Key Job Responsibilities:
Set-up and mise-en-place of COLD SECTION.
Rotation and selection of fresh produce for daily use.
Preparation of individual a la carte orders and platters.
Plating and assembling of all cold production as directed by the Sous Chef
Wash-down and end of shift duties.

Additional Info:
Candidates must be able to start on Salad Section and then move to Sauté BEFORE taking on responsibilities for Sushi production.
Time and experience will also be gained on Wooden Oven as well as the Tempura Station.
Career advancement opportunity exists for Senior CDP's to move onto Sauté Front as well as the Grill.

Package Details:
Salary negotiable according to experience (R11 600 - R13 000)
Overtime paid during season and time off in winter / off-season times.
