Job brief
Our client, a leading and well respected producer and much admired brand, redefines the industry and changes the way consumers feel, taste, see, smell and experience Hospitality and Wine produced. We are seeking to employ a Head Chef to run and manage the Farm Deli

Role Objective
Ensure the Farm Deli operates efficiently and profitably.
Representation of the Brand at all times

Responsibilities
Overseeing and managing the Deli food operations
To ensure all costings are in line with company policy, which includes the sourcing of contractors and suppliers
Ensure consistent top quality preparation of food and continued quality control
Menu planning and utilisation of food surplus
Orders and management of food wastage
Recruiting, training, supervising, developing, disciplining and counselling kitchen staff
Coordinate and participate in the activities of chefs and other kitchen personnel
Engage in preparing and cooking foods to ensure efficient and profitable food service
Responsible for the overall management of deli kitchen inventory including food stock and operational equipment
Ensure compliance with all licensing, hygiene and health and safety regulations.
Demonstrates commitment to the brand requirements and pillars.

Job Skills & Requirements
Formal Training in Culinary Arts
Leadership Skills: Managing the kitchen and assigning tasks, motivate colleagues in a high stress environment, good leader
Time Management Skills: Must be time and task driven
Hands-Eye Co-ordinations: Great knife and prep skills
Grasp of profit margins
Good communication skills, on all levels
A cool head and focussed
Creativity: Knowledge of ingredients and how to use them in a creative way
Organisational flair
Minimum 2+ years’ experience in a senior management position
Working knowledge of various computer software programs including, but not limited to Word-processing, spreadsheets and email (MS Office)
Focused, Driven
Able to work flexible hours, weekends and holidays

Language Skills
Ability to read, analyse and interpret general business publications, manuals or procedures. Able to communicate on all levels in an efficient manner.
