We are currently looking for an Executive Food and Beverage Manager for a 5 Star Big Five Private Game Reserve in the Eastern Cape

Minimum Requirements:

Qualification: Formal hospitality/food services diploma and / or
Minmum of 8-10 years in hospitality industry, preferably with a background knowledge of purchasing and stock control or
Min 5 years managerial experience in a similar position in a luxury or 5-star hospitality environment.
This is a live in position with an excellent salary on offer. Best suited to a single individual you will be considered should you have a spouse
Key Performance Areas include:

Will be responsible for overall F&B stock controls, systems and procedures, including placing of stock orders, being food, beverage, ops stock, linen, spa as well as requirements for functions such as weddings and conferences
Agree on menus, beverage and wine lists together with head chef, central procurement and CFO
Will be responsible for all guest supplies and cleaning orders for all cost centers on the reserve
Will be responsible for drawing up financial reports on F&B, housekeeping, cleaning, guest supplies, spa and operational stock and compare to set budgets
Will be responsible for the F&B dept and its assets
Ensure regular, consistent and correct deliveries to respective lodges on time
Co-ordinate staff training on hygiene and cleaning chemicals
Monitor FIFO and stock holding and reduce wastage
Manage supplier relationships to ensure consistency and quality of ingredients. Source best produce as locally as possible and at best price from trusted suppliers
Monitor guest feedback and take corrective action
Provide direction and guidance to lodge F&B teams
Spend time on the floor at lodges and lead by example
Schedule training requirements in accordance with the F&B standards across all F&B guest facing areas, i.e. food service, wine service, coffee service, F&B product knowledge.
Assist the sales and marketing manager to develop food and beverage offerings for larger groups.
Competencies required:

Must be fully computer literate including excel (advanced knowledge), word and pastel programs, as well as GAAP
Must co-ordinate functions and planning of various events
Must be able to liaise directly with suppliers and continue good relationship between them and the game reserve
Must have an excellent background knowledge of the F&B commodities that the lodge uses in the kitchens and bars.
Driver’s license required
