Position

We are looking for a passionate, skilled Pastry Chef! The Pastry Chef will strive towards delivering food and patisseries that boasts premium choices, sophisticated style, and well-crafted details. With your skills and imagination, together we will innovate to produce a premium dining experience.

Responsibilities

• Prepare breads, croissants and pastries, including preparing doughs and fillings, proofing, baking, and decorating as appropriate.
• Review Production sheet to understand variety of baked goods to be produced daily.
• Prepare and cook food according to recipes, quality and presentation standards, and food prep checklists.
• Maintain kitchen logs for food safety program compliance.
• Keep Chef informed of excess food items.
• Safely and appropriately use baking and measuring tools/equipment/appliances to prepare baked foods.
• Follow and ensure compliance with food safety handling policies and procedures, including personal hygiene procedures.
• Check and ensure correct temperatures of kitchen appliances and food, and report issues to management.
• Monitor the quality of food prepared and portions served ensuring that it boasts premium choices, sophisticated style, and well-crafted details.
• Follow all company policies and procedures, including safety and security; report accidents, injuries, and unsafe work conditions to management; complete safety training and certifications.
• Ensure uniform and personal appearance are clean and professional; maintain confidentiality of proprietary information; protect company assets.
• Speak with others using clear and professional language and answer telephones using appropriate etiquette.
• Develop and maintain positive working relationships with others and support team to reach common goals; handle sensitive issues with tact, respect, and confidentiality.
• Comply with quality expectations and standards.


• Move, lift, carry, push, pull, and place objects weighing less than or equal to 11kgs without assistance.
• Move over sloping, uneven, or slippery surfaces. Reach overhead and below the knees, including bending, twisting, pulling, and stooping.
• Stand, sit, or walk for an extended period of time.
• Perform other job duties as requested by Management for example catering contracts.
• Implement, maintain and uphold operational guidelines at all levels and represent the Company's brand and operating philosophy to ensure the consistent delivery of our quality customer service standards
• Strict adherence to company’s proprietary recipes, products, and procurement policies.
• Daily production for all dessert items, including but not limited to viennoiseries, pastries, chocolates, bespoke cakes and ice creams.
• Organisation and cleanliness of dried storage, walk-ins, and dairy fridge
• Serve as an internal resource and advisor in the areas of cost control, budgeting, forecasting, purchasing, inventory control, central kitchen
production and catering, menu planning and pricing.
• A true passion for culinary and bespoke food and patisserie

Skills and Qualifications

• Either a Culinary degree or a bachelor’s degree in business or hospitality management
• 5+ years of relevant experience in a premium restaurant, hotel, café or other relevant hospitality experience
• Must be able to produce bespoke cakes and patisserie
• Health and Sanitation certification
• Affinity to work in a premium niche sector
• Must have a proven track record and references
• Ability to work in fast-paced environments
• Conflict resolution skills
• Clear oral and written communication skills
• A high degree of organisational skills
• Proficiency in Microsoft Office
• Driver’s license/own transport
• Fluency in written and spoken English, second language an asset
• A hard working perfectionist who does not rest until the job is done
