Food & Beverage / Conference Manager

Location: Sea Point, Cape Town
Salary: R15k – R18k per month plus Medical Aid and Incentives

Requirements:
Shift Work: 07h00 – 16h00 or 12h00 – 21h00
Hotel Management Diploma/Degree essential
Experienced as a Food & Beverage Manager
MS Office essential
Knowledge of property management Pilot
Semper and Vingcard knowledge advantageous
Fluent in English – verbal and written
Excellent time management skills

Duties:
Food & Beverage Operations:
Prompt and efficient service of all meals, snacks, functions
Profit margins are maintained, agreed costs are not exceeded
Restaurants and conference rooms are clean, well maintained
Waiters and Barmen are always correctly and smartly dressed, professional and courteous
Bar and storerooms are clean and stocked with the stipulated requirements.
Room service orders are executed promptly
Room service staff is correctly and smartly dressed , and professional and friendly
Efficient running of the conferencing department
Conference function sheets are sent out to all staff weekly
Act as Duty Manager when required.
Order consumable and non-consumable goods, and stored/issued to various departments.
Company and statutory hygiene standards are maintained in all areas.
Customer complaints.
Reports, procedures and administration requirements are timorously submitted.
Regular stock takes are conducted and orders placed accordingly
Circulate throughout all restaurants, bars and banqueting departments, maintaining a high profile with customers and staff.
Hold regular staff meetings.
Aware of trends in the industry and make suggestions for improvement of the catering operation.
Food and Beverage Personnel:
Maintain appropriate standards of conduct, uniform and appearance of all front line employees.
Check that all staff adhere to the rules and regulations of the hotel
Assist the Management in the identification of training needs on an on-going basis.
Assist with on-the- job training as required.
F&B Administration & Revenue Control:
Ensure that all necessary administrative procedures i.e. Day End etc, pertaining to your shift has been completed accurately.
Balance and audit all figures to finalize and close off day end
Ensure that all cash floats are maintained with an adequate amount of change at all times.
Ensure that all voids are managed and signed off by management
