Kendrick Recruitment are now urgently searching for an experienced Head Pastry Chef for a luxury 5* hotel & resort based in the beautiful Garden Route town of George, Western Cape.The selected Head Pastry Chef will assist with the on the floor management and the control of the culinary areas in the F&B department, with primary focus on the pastry/ bakery production incl. food service, catering event planning for the share of the pastry department.The successful candidate will also have to provide a unique 5* top quality product throughout the hotel and restaurants and keep dining trends up to date through continuous product development whilst maintaining cost and expenses to contribute positively to F&B revenue. He/she will need to manage, supervise and to coordinate all other staff within the area of responsibility. Represent a positive attitude and play the role of a professional and enthusiastic team leader in order to maintain an uplifted moral and motivated team spirit.The position requires that the candidate has relevant experience and is in the possession of a professional Chefs Diploma gained through an internationally recognized institution with at least 6 years’ experience in culinary industry of which 3 years as an Head Pastry Chef in a 5* hotel or resort environment.Computer literacy on MS Office is essential; working knowledge on SAP and financial management awareness would be of good advantage. The ideal candidate will have good interpersonal skills, can comfortably and engagingly communicate with colleagues, superiors and guests.Duties include, but are not limited to:Keep abreast of trends in the culinary industryPlan production to facilitate daily requirementsAnalyze recipes and create a recipe manual in order to standardize our productAssign prices to menu items, based on food cost, labour cost, and overhead costsDesign special product offerings and showcase your abilitiesControl appropriate production to avoid loss or wastageControl financial allocation of distributed products to the relevant outletsCoordinate the planning, budgeting, purchasing of goodsProvide the flexibility to work a variety of shifts in accordance to business needsMaintain excellent grooming standardsMaintain strong supervisory skillsMaintain all administration and IR related work in your department Salary package is open to negotiation.
