This well-known and highly regarded hotel and conferencing property seeks a driven and creative
Pastry Sous Chef to join their kitchen team and build a career with the property.
Due to the hours, candidates local to the area and surrounds will be ideal.
The vacancy is permanent.

Scope and general purpose:
1. Assist the Executive Chef in coordinating and supervising the running of the entire kitchen department to the required standard
2. Maintain our aim and record of achieving maximum guest satisfaction
3. To increase sales, budget food cost and remain within kitchen budget
4. Focused on production of pastry and heading up the pastry section
5. Maintaining high standards of hygiene, health and safety set in the kitchen and any designated areas

Responsible to:
Executive Chef, Executive Sous Chef

Responsible for:
• All subordinate section / kitchen staff

Liaises with:
• Heads of department
• Purchasing
• Laundry

Essential criteria:
• The successful candidate must have worked in a similar role
• Ability to take instruction quickly, work as a team and retain information and detail
• Highly organised, ability to work neatly and have a tidy section at all times
• Creative with high attention to detail and consistency


Main duties and key performance areas include but are not limited to:
• Ensure that all chefs de parties are familiar with the day’s requirements
• Ensure that all the necessary stocks are on hand with the correct quality and quantity
• Timeous arrival for shifts at designated area
• Consistent fair and courteous treatment of staff and other employees
• Consistent and fair discipline of staff
• Maintain discipline in kitchen but mainly in Pastry Section
• Adherence of statutory and company hygiene regulations
• Up-to-date maintenance of time tables, leave rosters and attendance registers
• Ensure that correct table orders are received by all cooks
• Timely reporting and follow-up of kitchen maintenance issues
• Smooth running of communication between restaurant and kitchen
• Ensure the quality, quantity and presentation of all food leaving the kitchen
• Ensure that dining room / restaurant personnel are standing by when delicate dishes are served
• Ensure regular on-the-job training is carried out so that subordinate staff perform their duties correctly and assist the Executive Chef in his /
her monthly training
• Attend seminars, training courses and any other CPD interventions as and when directed
• Further own CPD of management principles and methods to ensure future advancement and further upgrading in management standards for
the profession generally
• Ensure immediate subordinates perform within the framework as set forth in their job description and standards of performance
• Assist in the planning of annual leave of all kitchen staff, ensuring leave applications are handed to the Executive Chef and to ensure that
leave is taken accordingly
• Ensure all staff start on duty on time and are in full uniform
• Responsible for all standard stock items and equipment in the kitchen department and to ensure that equipment is used for appropriate
usage
• Daily kitchen sub-section tours: checking on requirements, preparation and approving requisitions
• Ensure that hotel property Cost Control Policy and Procedures are followed
• Check physical aspects of all kitchen areas, cold rooms, equipment, tools and implements
• Ensure the highest standards of hygiene, health and safety of all areas
• To perform any other duties as directed by the Executive Chef

Hours of work:
9 hour shifts covering from 06:00 - 24:00 and / or as per operational requirements
