About the position:
The Chef De Cuisine is responsible for daily operations in the fine dining restaurant and overseeing his/her own team in providing sophisticated and elegant trend-setting cuisine, planning and creating menus, orders, food production, staff management, admin & HR. The Chef De Cuisine is also required to assist the Executive Head Chef in overseeing hotel operations and supporting with management of kitchen operations and ensuring 5* deluxe standards.

Position Requirements:
Formal Cheffing / Culinary Diploma
Previous experience within a large hotel operation and Fine Dining operations,
International Cheffing and Private Cheffing experience a HUGE ADVANTAGE
Creative Menu Design experience with a PASSION for DAILY CHANGING MENUS
Experienced with Food and Wine Pairing and Artisan Culinary Skills
Confident in overseeing the Procurement Process and liaising with suppliers etc
Temperament for Developing and Training younger chefs
Strong directing and control skills with staff & managing teams
Proven abilities in menu costing, utilisation of ingredients, stock and wastage controls
Leadership, Planning, Organisational and Management abilities
Strong Computer Proficiency on MS Excel & Word as well as Back of House / Inventory Systems
Excellent Guest Relations Skills and comfortable in dealing with customers directly
Strong written and verbal communication skills
Creative problem-solving skills
