This 5-star luxury boutique hotel in Cape Town is looking for a talented and creative Senior Chef de Partie to take on duties for lunch and dinner a la carte at the 60 seater fine dining restaurant. With a brigade of 14 highly skilled professionally trained chefs, the Snr CDP's are responsible for their own section prep, plating and sending out orders. Additional requirements include the creation of daily wine or whiskey pairing tapas dishes as well as pre-dinner starters and a weekly changing starter and main course menu item.

The client is looking for formally trained, skilled and passionate young chefs who are DRIVEN and inspired by INTERNATIONAL CULINARY TRENDS.

Requirements:
Formal Cheffing / Culinary Qualification from a top chef's school.
Minimum 3 to 4 years fine dining experience within a similar a la carte restaurant or OVERSEAS work experience within Michelin standard restaurants.
Able to manage and run Hot or Cold Section with one Demi CDP & Commis or Trainee Chef.
Working hours: 2 days off per week with 5 x split shifts.
Experience with menus costing & stock controls.
Must have excellent menu writing skills with use of ADVANCED menu terminology.
Advanced PLATING SKILLS with creativity and versatility in using DIFFERENT & innovative plating styles/trends.
Excellent communication skills in ENGLISH both written and verbal with confidence in explaining dishes to guests directly.
Computer proficiency in Excel AND Word essential.
Own transport.
