We are looking for a skilled Food and Beverage COST & STOCK CONTROLLER with experience in Fine Dining a la carte restaurant operations. A candidate who can clamp down on discipline, lock down on systems, understand par levels & wastage controls and who is strong on stock controls and organizing systems. A cost controller who understands high-end award winning restaurant operations, kitchen procedures and has an eye for figures, details, admin and controls.

Someone who is VERY STRUCTURED and able to quickly pick up errors on invoices, deliveries, supply and ordering controls, food and beverage costing, Gross Profit percentages, SHRINKAGE and WASTE CONTROL & stock losses. A candidate who understands PAR LEVELS, effective key controls, multiple staff entry and exit points and who is willing to be actively involved, ON THE FLOOR while keeping control of his / her admin and back of house areas.

KEY PERFORMANCE AREAS
Maintain accurate record of inventory and stock management systems & calculate stock variances
Control Par Stocks, Regulate stock levels and accurately predict BUYING PATTERNS
Develop inventory control methods to promote lower cost of sales, shorter lead times, and reduced stock levels
Oversee the standard of all fresh produce and dry goods
Liaise with production / kitchen staff to establish quality of operating stocks
Forecast of supply and demand levels
Oversee the functionality and accuracy of MICROS Back of House / Inventory and POS system
Control the maintenance and security of storerooms and ensure correct storage of stock
Carry out stock management procedures
Separate use / control of record keeping on Excel
Identify risks (theft and food spoilage) and develop effective solutions to minimize losses
Oversee and control all kitchen orders and ensure effective supply, delivery & processing of incoming stock
Establish and maintain good working relationships with all suppliers to enable easier procurement of products
Monitor operating budget and be on top of daily figures, stock usage, revenues and gross profit margins

OUALIFICATIONS AND REQUIREMENTS
Matric and F&B Cost Controlling Certificate / Diploma
Minimum 3 - 5 years’ experience in a stock controlling position
Computer Knowledge: MS Excel, Office, Easypos, MICROS and cost of sales System experience
Ability to correctly communicate detailed information and instruction to others
Highly analytical with strong admin and financial competency skills
Physically fit and able to lift heavy boxes
Ability to monitor and ensure compliance with health, safety, security and other legal requirements across stock control operations
